Sourdough with Attitude

The Raging Unicorn

Small-batch sourdough breads and discard snacks, handcrafted with simple ingredients, plenty of patience and a little Raging Unicorn attitude.

Meet The Raging Unicorn

The Raging Unicorn began with a sourdough starter named Audrey, a little curiosity, and a desire to eat something that wasn't full of ingredients I couldn't pronounce.

Turns out, Audrey had other plans for me. She made me slow down.

In a world that always seems to be rushing somewhere, sourdough asks you to do the opposite.

You mix it, fold it, wait for it, learn from it, and occasionally wonder what on earth it's doing.

I fell in love with that process.

There's something incredibly satisfying about taking a handful of simple ingredients, giving them a little time and attention, and turning them into something worth gathering around the table for. Then I discovered everything I could make with sourdough discard, and well, the Test Kitchen is now completely out of hand.

Why The Raging Unicorn?

I knew from the beginning this wasn't going to be a quiet little micro bakery with delicate names and perfectly serious bread.

The Raging Unicorn is a little unconventional, occasionally stubborn, full of personality and perfectly happy doing things differently.

My breads have names like Nothing Fancy, Anti-Social, No Regrets and Couldn't Decide. There's even a little Therapy for those days when chocolate seems like the most reasonable solution.

I take my baking seriously. Myself? Not so much.

Handmade, Not Mass Produced

Everything starts in my Calgary home kitchen, where I focus on simple ingredients, small batches and making things that actually taste good.

I'm not interested in mass production or turning out hundreds of identical loaves.

Handmade means handmade. Sometimes a loaf has a little more character than its neighbour. Sometimes an experiment doesn't quite go according to plan. That's part of working with real ingredients, real fermentation and a sourdough starter that occasionally has opinions of her own.

I'm not chasing factory perfection. I'm chasing good flavour, quality and consistency, with a little room for creativity along the way.

You're Part of the Story Too

One of my favourite parts of building The Raging Unicorn is sharing the journey.

My customers aren't just customers. They're contributors.

The Test Kitchen is where new ideas come to life, recipes get experimented with, and occasionally something comes out of the oven that needs a little more work.

That's where you come in.

Not everyone is going to love every recipe, and that's perfectly okay! I want to hear what you like, what you'd change and even what you wouldn't try again.

I'm just as interested in understanding why something doesn't work for you as I am in hearing what you love about it.

Those conversations help me learn, improve and decide which creations earn a place on The Unicorn Lineup, which ones need a little more work and which ones are better left as experiments.

Everyone gets a voice, but not every recipe makes the cut. 😉

I want The Raging Unicorn to be a place where people feel comfortable sharing their opinions, exchanging ideas and having a laugh along the way. We don't have to agree on everything to appreciate each other's perspectives.

It's a Simple Vision

At the heart of it all, the idea is pretty simple:

🦄 Good ingredients
🦄 Small batches

🦄 Real people
🦄 Honest feedback
🦄 Good conversations

🦄 A pinch of attitude
🦄 A dash of sass
🦄 A sprinkle of laughter

And hopefully, something delicious coming out of the oven.

Nothing Fancy. Just good bread.
